Litti Chokha is a traditional dish originating from the Indian state of Bihar. It is made up of a mixture of whole wheat flour and sattu (roasted gram flour), shaped into round balls and stuffed with a mixture of spices, ghee and sometimes, mashed vegetables. The stuffed balls are then roasted over charcoal or baked in a traditional clay oven. Litti Chokha is typically served with a side of spicy mashed vegetables (chokha) made from roasted eggplant, tomatoes, and garlic, and is often accompanied by yogurt or chutney. The dish is popular in eastern India and is considered a staple food in the region.
